Ingredients
  

  • 0.5 green plantain, peeled and chopped
  • 1/3 cup full-fat coconut milk
  • 0.5 cup baby spinach
  • 0.5 small avocado
  • 0.5 tsp cinnamon
  • ice cubes, as needed
  • shredded coconut, berries, or banana slices, for topping (optional)

Instructions
 

  • Add green plantain, coconut milk, spinach, avocado, cinnamon, and ice to a high-speed blender.
  • Blend until thick and smooth, adjusting coconut milk for consistency.
  • Pour into a bowl and top with desired toppings.

Notes

You can prep smoothie packs ahead of time with pre-chopped plantain, spinach, and avocado. Just freeze and blend with coconut milk in the morning. Top with AIP-approved options like shredded coconut, fresh berries, or sliced banana. For added protein, blend in collagen or pre-cooked ground turkey.
