Ingredients
3 medium ripe tomatoes, diced
1 large cucumber, peeled and sliced
1 small red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
Instructions
In a large bowl, combine the diced tomatoes, sliced cucumber, and thinly sliced red onion.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, honey, salt, and black pepper until well combined.
