Description

A quick and healthy meal featuring succulent shrimp and crisp vegetables cooked to perfection in the air fryer. Perfect for a nutritious weeknight dinner.

1 pound large shrimp, peeled and deveined
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
1 cup broccoli florets
1 medium red onion, cut into wedges
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley


Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the shrimp, red bell pepper, zucchini, broccoli florets, and red onion.
Add olive oil, garlic powder, smoked paprika, salt, and black pepper to the bowl. Toss everything together until the shrimp and vegetables are evenly coated with the seasoning and oil.
Place the shrimp and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
Cook for 10 minutes, shaking the basket halfway through to ensure even cooking.
After 10 minutes, check that the shrimp are opaque and cooked through and the vegetables are tender-crisp. If needed, cook for an additional 2 minutes.
Transfer the shrimp and vegetables to a serving dish. Drizzle with fresh lemon juice and sprinkle with chopped fresh parsley.
Serve immediately.
