Description

A healthy and delicious chicken salad sandwich made with tender cooked chicken, creamy Greek yogurt, and crisp vegetables, perfect for a quick lunch or light dinner.


Ingredients

1 cup cooked chicken breast, shredded
1/4 cup plain Greek yogurt
2 tablespoons celery, finely chopped
2 tablespoons red onion, finely chopped
1 tablespoon fresh parsley, chopped
1 teaspoon Dijon mustard
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
4 slices whole wheat bread
4 leaves romaine lettuce


Instructions

In a medium bowl, combine the shredded cooked chicken breast, plain Greek yogurt, finely chopped celery, finely chopped red onion, and chopped fresh parsley.
Add the Dijon mustard, lemon juice, salt, and black pepper to the bowl. Stir until all ingredients are evenly mixed and the chicken salad is creamy.
Lay out the four slices of whole wheat bread on a clean surface.
Place a leaf of romaine lettuce on two of the bread slices.
Divide the chicken salad mixture evenly and spread it over the lettuce on the two bread slices.
Top each with the remaining bread slices to form sandwiches.
Cut each sandwich in half if desired and serve immediately.
