A quick and easy one pot garlic chicken pasta recipe that combines tender chicken, flavorful garlic, and perfectly cooked pasta in a creamy sauce. Perfect for a weeknight dinner with minimal cleanup.
Ingredients
2 tablespoons olive oil
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
6 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups low-sodium chicken broth
1 cup water
8 ounces uncooked penne pasta
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
2 cups baby spinach leaves
2 tablespoons chopped fresh parsley
Instructions
Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add chicken pieces to the skillet and season with salt, black pepper, and dried Italian seasoning. Cook for 5-6 minutes, stirring occasionally, until chicken is browned and cooked through.
Add minced garlic to the skillet and sauté for 1 minute until fragrant.
Pour in the chicken broth and water, then add the uncooked penne pasta. Stir to combine and bring the mixture to a boil.
Reduce heat to medium-low, cover the skillet, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Stir in the heavy cream, grated Parmesan cheese, and baby spinach leaves. Cook for 2-3 minutes until the spinach wilts and the sauce is creamy.
Remove from heat and sprinkle chopped fresh parsley over the pasta before serving.
