Description

2 medium cucumbers, peeled and diced
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and halved
1/2 cup crumbled feta cheese
1/4 cup red onion, thinly sliced
2 tablespoons fresh parsley, chopped
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper


Instructions

In a large mixing bowl, combine the diced cucumbers, halved cherry tomatoes, Kalamata olives, crumbled feta cheese, and thinly sliced red onion.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and freshly ground black pepper until well combined.
