Description

A tender and flavorful keto-friendly slow cooker roast beef, perfect for low-carb meals. This recipe uses simple ingredients and slow cooking to create a juicy roast that pairs well with your favorite keto sides.

3 pounds beef chuck roast, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
2 tablespoons olive oil
1 cup beef broth, unsalted
2 tablespoons Worcestershire sauce
4 cloves garlic, minced
1 medium yellow onion, sliced
2 sprigs fresh rosemary
2 sprigs fresh thyme


Instructions

In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
Pat the beef chuck roast dry with paper towels. Rub the spice mixture evenly all over the roast.
Heat olive oil in a large skillet over medium-high heat. When hot, sear the roast on all sides until browned, about 3-4 minutes per side.
Transfer the seared roast to the slow cooker.
Add the beef broth, Worcestershire sauce, minced garlic, and sliced onion around the roast in the slow cooker.
Place the rosemary and thyme sprigs on top of the roast.
Cover and cook on low for 8 hours, or until the beef is tender and easily shredded with a fork.
Remove the roast from the slow cooker and let it rest for 10 minutes before slicing.
Optional: Skim any excess fat from the cooking liquid and use it as a sauce or gravy.
