2 cups broccoli florets
2 cups cauliflower florets
2 medium carrots, peeled and sliced into 1/2-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch rounds
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Preheat the Ninja Air Fryer to 400°F (200°C) for 3 minutes.
In a large mixing bowl, combine broccoli florets, cauliflower florets, sliced carrots, red bell pepper pieces, and zucchini slices.
Drizzle the olive oil over the vegetables and toss to coat evenly.
Sprinkle garlic powder, dried thyme, smoked paprika, salt, and black pepper over the vegetables. Toss again to distribute the seasonings evenly.
Place the seasoned vegetables in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
Air fry the vegetables at 400°F (200°C) for 10 minutes.
After 10 minutes, shake the basket or use tongs to toss the vegetables to ensure even cooking.
Continue air frying for an additional 8-10 minutes until the vegetables are tender and slightly crispy on the edges.
Remove the vegetables from the air fryer and transfer to a serving dish.
