Crispy on the outside and soft on the inside, these Air Fryer Potato Logs are a delicious and easy snack or side dish. Made with shredded potatoes, cheese, and seasonings, they’re perfect for a quick appetizer or a tasty treat any time.
Ingredients
3 cups shredded russet potatoes, squeezed dry
1/2 cup shredded sharp cheddar cheese
1/4 cup finely chopped green onions
1 large egg
1/4 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large mixing bowl, combine the shredded potatoes, shredded cheddar cheese, chopped green onions, and egg. Mix well to combine.
Add the flour, garlic powder, smoked paprika, salt, and black pepper to the potato mixture. Stir until all ingredients are evenly incorporated.
Divide the mixture into 12 equal portions. Shape each portion into a log about 3 inches long and 1 inch thick.
Lightly spray the air fryer basket with cooking spray to prevent sticking.
Place the potato logs in a single layer in the air fryer basket, making sure they do not touch. You may need to cook in batches.
Air fry the potato logs at 400°F (200°C) for 12 to 15 minutes, flipping halfway through cooking, until they are golden brown and crispy on the outside.
Remove the potato logs from the air fryer and let them cool for 2 minutes before serving.
