Description

A comforting and hearty crock pot chicken orzo soup made with tender chicken, vegetables, and delicate orzo pasta simmered to perfection. Perfect for an easy weeknight meal or cozy lunch.


Ingredients

1 pound boneless skinless chicken breasts
1 medium yellow onion, diced
3 medium carrots, peeled and diced
3 celery stalks, diced
3 cloves garlic, minced
6 cups low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon kosher salt
1 cup orzo pasta
2 cups fresh baby spinach, roughly chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice


Instructions

Place the chicken breasts in the bottom of the crock pot.
Add the diced onion, carrots, celery, and minced garlic on top of the chicken.
Pour the chicken broth over the ingredients in the crock pot.
Sprinkle the dried thyme, dried oregano, black pepper, and kosher salt evenly over the top.
Cover and cook on low for 4 hours, or until the chicken is cooked through and vegetables are tender.
Remove the chicken breasts from the crock pot and shred them using two forks.
Return the shredded chicken to the crock pot.
Add the orzo pasta to the crock pot and stir to combine.
Cover and cook on high for an additional 30 minutes, or until the orzo is tender.
Stir in the chopped baby spinach, fresh parsley, and lemon juice.
Cook for 5 more minutes until the spinach is wilted.
Taste and adjust seasoning with additional salt and pepper if desired.
Serve hot and enjoy!
