3 Packet Pot Roast Slow Cooker

Description

A simple and flavorful slow cooker pot roast recipe using three seasoning packets for a delicious, tender meal with minimal prep.

3 pounds beef chuck roast
1 packet onion soup mix (about 1 ounce)
1 packet ranch seasoning mix (about 1 ounce)
1 packet au jus gravy mix (about 1 ounce)
1 cup beef broth
4 medium carrots, peeled and cut into 2-inch pieces
4 medium potatoes, peeled and cut into quarters
1 medium onion, sliced
2 cloves garlic, minced
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste


Instructions

Pat the beef chuck roast dry with paper towels and season both sides lightly with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Remove from heat.
Place the sliced onion, carrots, potatoes, and minced garlic into the bottom of the slow cooker.
Place the seared roast on top of the vegetables in the slow cooker.
Sprinkle the onion soup mix, ranch seasoning mix, and au jus gravy mix evenly over the roast.
Pour the beef broth around the roast, avoiding washing off the seasoning packets on top.
Cover the slow cooker and cook on low for 8 hours, or until the roast is tender and easily shredded with a fork.
Once cooked, remove the roast and vegetables from the slow cooker. Let the roast rest for 5 minutes before slicing or shredding.
Serve the pot roast with the cooked vegetables and spoon some of the cooking juices over the top.
