Quick and flavorful air fryer shrimp fajitas made with frozen shrimp and colorful bell peppers, served with warm tortillas for an easy weeknight meal.
Ingredients
1 pound frozen peeled and deveined shrimp
1 medium red bell pepper, sliced into thin strips
1 medium green bell pepper, sliced into thin strips
1 medium yellow bell pepper, sliced into thin strips
1 medium onion, sliced into thin strips
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small flour tortillas
1 lime, cut into wedges
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the frozen shrimp, sliced red, green, and yellow bell peppers, and sliced onion.
Drizzle the olive oil over the shrimp and vegetables.
In a small bowl, mix together chili powder, ground cumin, smoked paprika, garlic powder, onion powder, crushed red pepper flakes, salt, and black pepper.
Sprinkle the seasoning mixture evenly over the shrimp and vegetables and toss everything together until well coated.
Place the shrimp and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
Cook at 400°F (200°C) for 10 to 12 minutes, shaking the basket halfway through cooking to ensure even cooking, until the shrimp are opaque and cooked through and the vegetables are tender-crisp.
Warm the flour tortillas in the air fryer for 1 to 2 minutes or in a microwave wrapped in a damp paper towel.
Serve the shrimp and vegetables on warm tortillas with lime wedges on the side for squeezing over.
