Ingredients
1 pound boneless skinless chicken breasts
4 cups low sodium chicken broth
2 cups water
3 medium carrots, peeled and sliced
2 celery stalks, sliced
1 medium yellow onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon dried rosemary
1/2 teaspoon black pepper
1 teaspoon salt
6 ounces egg noodles
2 tablespoons olive oil
Instructions
Turn the crock pot to low heat.
Add the chicken breasts, chicken broth, water, sliced carrots, sliced celery, diced onion, and minced garlic to the crock pot.
Sprinkle dried thyme, dried parsley, dried rosemary, black pepper, and salt over the ingredients in the crock pot.
Cover and cook on low for 5 hours.
After 5 hours, remove the chicken breasts from the crock pot and place them on a cutting board.
Use two forks to shred the chicken into bite-sized pieces.
Return the shredded chicken to the crock pot.
Add the egg noodles to the crock pot and stir to combine.
Cover and cook on low for an additional 1 hour, or until the noodles are tender.
Drizzle olive oil into the soup and stir well before serving.
