Cheesy Chicken and Broccoli Casserole Crock Pot

Description

A creamy and cheesy chicken and broccoli casserole made effortlessly in the crock pot. Perfect for a comforting weeknight dinner with tender chicken, fresh broccoli, and melted cheese all cooked together to perfection.


Ingredients

2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
4 cups fresh broccoli florets
1 can (10.5 ounces) condensed cream of chicken soup
1 cup sour cream
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked white rice


Instructions

Spray the inside of the crock pot with non-stick cooking spray.
Place the cut chicken breasts evenly in the bottom of the crock pot.
Add the fresh broccoli florets on top of the chicken.
In a medium bowl, whisk together the condensed cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper until smooth.
Pour the soup mixture evenly over the chicken and broccoli in the crock pot.
Cover the crock pot and cook on low for 4 hours, or until the chicken is fully cooked and broccoli is tender.
After 4 hours, stir in the cooked white rice and half of the shredded cheddar and mozzarella cheeses.
Sprinkle the remaining shredded cheddar and mozzarella cheeses evenly on top.
Cover and cook on low for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve hot and enjoy your cheesy chicken and broccoli casserole.
