Description

A quick and flavorful one pot pasta recipe that combines pasta, tomatoes, garlic, and herbs all cooked together for an easy and delicious meal with minimal cleanup.


Ingredients

12 ounces dried spaghetti
1 can (14.5 ounces) diced tomatoes with juice
1 medium yellow onion, thinly sliced
4 cloves garlic, thinly sliced
4 1/2 cups vegetable broth
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil leaves


Instructions

In a large wide pot or deep skillet, combine the dried spaghetti, diced tomatoes with juice, sliced onion, sliced garlic, vegetable broth, olive oil, dried oregano, dried basil, red pepper flakes, salt, and black pepper.
Bring the mixture to a boil over high heat, stirring frequently to prevent the pasta from sticking to the bottom of the pot.
Once boiling, reduce the heat to medium and continue to cook uncovered, stirring occasionally, for about 9 to 12 minutes or until the pasta is al dente and most of the liquid has been absorbed.
Remove the pot from heat. Stir in the grated Parmesan cheese until melted and well combined.
Sprinkle the chopped fresh basil over the pasta and gently toss to combine.
Serve immediately, garnished with additional Parmesan cheese if desired.
