Cottage Cheese Lasagna Skillet

Description

A quick and easy one-pan lasagna dish made with cottage cheese, ground beef, and marinara sauce, layered with pasta and melted mozzarella for a comforting meal.


Ingredients

1 tablespoon olive oil
1 pound ground beef
1 small onion, diced
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups marinara sauce
2 cups water
8 ounces uncooked lasagna noodles, broken into 2-inch pieces
1 1/2 cups cottage cheese
1 large egg
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
2 tablespoons chopped fresh basil


Instructions

Heat olive oil in a large deep skillet over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Stir in minced garlic, dried Italian seasoning, salt, and black pepper; cook for 1 minute until fragrant.
Pour in marinara sauce and water, stirring to combine.
Add broken lasagna noodles to the skillet and stir to submerge noodles in the sauce.
Bring the mixture to a simmer, cover the skillet, and cook for 15 minutes, stirring occasionally, until noodles are tender.
In a medium bowl, combine cottage cheese, egg, and grated Parmesan cheese; mix well.
Remove the skillet from heat and dollop the cottage cheese mixture evenly over the noodles.
Sprinkle shredded mozzarella cheese evenly on top.
Cover the skillet again and let it sit for 5 minutes to allow the cheese to melt.
Sprinkle chopped fresh basil over the top before serving.
