A hearty and healthy crock pot chicken quinoa soup packed with tender chicken, nutritious quinoa, and fresh vegetables. Perfect for a comforting meal any day of the week.
Ingredients
1 pound boneless skinless chicken breasts
1 cup quinoa, rinsed
1 medium onion, diced
3 medium carrots, peeled and sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups low sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 cup fresh spinach, chopped
2 tablespoons fresh parsley, chopped
Instructions
Place the chicken breasts at the bottom of the crock pot.
Add the rinsed quinoa, diced onion, sliced carrots, sliced celery, and minced garlic on top of the chicken.
Pour the chicken broth over all the ingredients in the crock pot.
Sprinkle the dried thyme, dried oregano, ground black pepper, and salt evenly over the mixture.
Cover the crock pot and cook on low for 6 hours.
After 6 hours, remove the chicken breasts and shred them using two forks.
Return the shredded chicken to the crock pot and stir in the chopped spinach and fresh parsley.
Cover and cook for an additional 10 minutes on low until the spinach is wilted.
Stir the soup well before serving.
