1.5 pounds baby red potatoes, halved
1 pound smoked sausage, sliced into 1/2-inch rounds
1 large red bell pepper, cut into 1-inch pieces
1 large yellow onion, cut into 1-inch pieces
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped


Instructions

Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby red potatoes, sliced smoked sausage, red bell pepper pieces, and onion pieces.
Drizzle the olive oil over the mixture.
Sprinkle garlic powder, smoked paprika, dried thyme, salt, and black pepper over the ingredients in the bowl.
Toss everything together until the potatoes, sausage, and vegetables are evenly coated with oil and seasonings.
Spread the mixture evenly on a large rimmed baking sheet in a single layer.
Place the baking sheet in the preheated oven and roast for 30 to 35 minutes, stirring halfway through, until the potatoes are tender and golden brown and the sausage is cooked through.
Remove the sheet pan from the oven and sprinkle the chopped fresh parsley over the top.
Serve hot directly from the sheet pan.
