A quick and easy single serving banana muffin, perfect for a delicious snack or breakfast treat made with ripe banana and simple ingredients.
Ingredients
1/4 cup all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup ripe banana, mashed (about half a small banana)
2 tablespoons milk
1 tablespoon vegetable oil
1/4 teaspoon vanilla extract
1 tablespoon chopped walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a small bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.
In another bowl, combine the mashed banana, milk, vegetable oil, and vanilla extract. Mix well.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
If using, fold in the chopped walnuts gently.
Pour the batter into a greased or lined muffin tin or a small oven-safe ramekin.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the muffin cool for 5 minutes before enjoying.
