High Protein Ground Beef Zucchini Skillet

Description

Ingredients

1 pound lean ground beef (90% lean)
2 medium zucchinis, diced
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/4 cup chopped fresh parsley


Instructions

Heat the olive oil in a large skillet over medium-high heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the ground beef to the skillet. Break it apart with a spatula and cook until browned and no longer pink, about 6-7 minutes.
Drain any excess fat from the skillet if necessary.
Stir in the diced zucchini, ground cumin, smoked paprika, dried oregano, crushed red pepper flakes, salt, and black pepper.
Cook, stirring occasionally, until the zucchini is tender but still slightly crisp, about 5 minutes.
Remove from heat and sprinkle with chopped fresh parsley before serving.
