Description

A flavorful and easy sheet pan shrimp boil cooked entirely in the oven. This recipe combines shrimp, sausage, corn, and potatoes with classic Cajun seasonings for a delicious one-pan meal.

1 pound small red potatoes, halved
2 tablespoons olive oil
1 tablespoon Cajun seasoning, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
3 ears corn, husked and cut into thirds
1 pound smoked sausage, sliced into 1/2-inch pieces
1 pound large shrimp, peeled and deveined, tails on
3 cloves garlic, minced
1 lemon, sliced into rounds
2 tablespoons unsalted butter, melted
2 tablespoons fresh parsley, chopped


Instructions

Preheat the oven to 400°F (200°C).
In a large bowl, toss the halved potatoes with 1 tablespoon olive oil, 1/2 tablespoon Cajun seasoning, salt, and black pepper until evenly coated.
Spread the potatoes in a single layer on a large rimmed sheet pan.
Roast the potatoes in the preheated oven for 15 minutes.
Remove the sheet pan from the oven and add the corn pieces and sliced sausage to the potatoes. Drizzle with the remaining 1 tablespoon olive oil and sprinkle with 1/2 tablespoon Cajun seasoning. Toss gently to combine.
Return the sheet pan to the oven and roast for an additional 10 minutes.
Meanwhile, in a small bowl, combine the shrimp, minced garlic, melted butter, and lemon slices. Toss to coat evenly.
After the 10 minutes, remove the sheet pan again and add the shrimp mixture on top of the potatoes, corn, and sausage.
Return the sheet pan to the oven and roast for 5 to 7 minutes, or until the shrimp are pink and cooked through.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
