Ingredients
2 cups almond flour
1/2 cup vanilla whey protein powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1/2 cup unsweetened almond milk
1/4 cup plain Greek yogurt
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1/4 cup erythritol
Instructions
Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
In a large bowl, whisk together almond flour, whey protein powder, baking powder, baking soda, and salt until well combined.
In a separate medium bowl, beat the eggs, then add unsweetened almond milk, Greek yogurt, melted coconut oil, vanilla extract, and erythritol. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Divide the batter evenly among the 12 muffin cups.
Bake for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
