Crock Pot Beef Loin

Description

A tender and flavorful beef loin slow-cooked to perfection in a crock pot, perfect for a hearty and comforting meal.


Ingredients

3 pounds beef loin roast
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 cloves garlic, minced
1 large onion, sliced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 medium carrots, peeled and cut into 1-inch pieces
2 stalks celery, cut into 1-inch pieces
2 medium potatoes, peeled and cut into chunks


Instructions

Season the beef loin roast evenly with salt and black pepper on all sides.
Heat olive oil in a large skillet over medium-high heat. Sear the beef loin roast on all sides until browned, about 3-4 minutes per side.
Place the sliced onion, minced garlic, carrots, celery, and potatoes at the bottom of the crock pot.
Transfer the seared beef loin roast on top of the vegetables in the crock pot.
In a bowl, combine beef broth, Worcestershire sauce, dried thyme, and dried rosemary. Pour the mixture over the beef and vegetables.
Cover the crock pot and cook on low for 6 hours, or until the beef is tender and the vegetables are cooked through.
Once cooked, remove the beef loin from the crock pot and let it rest for 10 minutes before slicing.
Serve the sliced beef loin with the cooked vegetables and spoon some of the cooking liquid over the top.
