4 English muffins, split in half
4 large eggs
1 cup shredded cheddar cheese
1/2 cup cooked breakfast sausage, crumbled
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
1/4 cup diced red onion
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 tablespoons chopped fresh parsley


Instructions

Preheat the oven to 375°F (190°C).
Place the English muffin halves on a baking sheet, cut side up.
Brush each English muffin half lightly with olive oil.
In a medium skillet over medium heat, sauté the diced green bell pepper, red bell pepper, and red onion for about 3-4 minutes until softened. Remove from heat.
Evenly distribute the cooked sausage over each English muffin half.
Sprinkle the sautéed vegetables evenly over the sausage on each muffin half.
Crack one egg onto each English muffin half, being careful to keep the yolk intact.
Season each egg with salt, black pepper, and garlic powder.
Sprinkle shredded cheddar cheese evenly over each muffin half, covering the egg and toppings.
Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the cheese is melted and bubbly.
