Ingredients
1 cup rolled oats
2 cups unsweetened almond milk
1 medium apple, peeled, cored, and diced
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
1 tablespoon maple syrup
1/4 teaspoon salt
1 tablespoon chopped walnuts
Instructions
In a medium saucepan, combine the rolled oats, almond milk, diced apple, brown sugar, ground cinnamon, ground nutmeg, and salt.
Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and simmer, stirring occasionally, for about 8 minutes or until the oats are tender and the mixture has thickened.
Remove the saucepan from heat and stir in the vanilla extract and maple syrup.
Divide the apple cake oats into two bowls and sprinkle each with chopped walnuts before serving.
