  • Yield: 2 1x

Description

A warm and comforting breakfast that combines the flavors of classic banana bread with hearty oatmeal. This banana bread oatmeal is easy to make, naturally sweetened with ripe bananas, and perfect for a nutritious start to your day.

Ingredients

Scale

1 cup rolled oats
2 cups water
1 large ripe banana, mashed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons chopped walnuts
2 tablespoons raisins

Instructions

In a medium saucepan, bring 2 cups of water to a boil over medium-high heat.
Add 1 cup of rolled oats and 1/4 teaspoon of salt to the boiling water. Reduce heat to medium-low and simmer, stirring occasionally, for 5 minutes.
Stir in the mashed banana, ground cinnamon, ground nutmeg, maple syrup, and vanilla extract.
Continue cooking the oatmeal mixture for an additional 3 to 5 minutes, stirring frequently, until the oats are tender and the mixture thickens to your desired consistency.
Remove the saucepan from heat and stir in the chopped walnuts and raisins.
Divide the banana bread oatmeal into two bowls and serve warm.
