Ingredients
1 cup old-fashioned rolled oats
1/2 cup almond butter
1/4 cup honey
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 teaspoon vanilla extract
1/4 cup mini chocolate chips
1/4 cup raisins
Instructions
In a large mixing bowl, combine the rolled oats, ground cinnamon, ground nutmeg, and ground ginger.
Add the almond butter, honey, and vanilla extract to the dry ingredients.
Mix all ingredients thoroughly until well combined and sticky.
Fold in the mini chocolate chips and raisins evenly throughout the mixture.
Using your hands or a small cookie scoop, form the mixture into 12 evenly sized bite-sized balls.
Place the energy bites on a parchment-lined tray or plate.
Refrigerate the bites for at least 30 minutes to firm up before serving.
