Ingredients
1 pound ground beef
2 medium zucchinis, diced
1 medium yellow onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2 cup shredded cheddar cheese
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion to the skillet and cook for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until fragrant.
Add ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Drain excess fat from the skillet if necessary.
Add diced zucchini to the skillet and stir to combine with the beef mixture.
Sprinkle dried oregano, dried basil, smoked paprika, salt, black pepper, and red pepper flakes over the mixture and stir well.
Cook for an additional 6-8 minutes, stirring occasionally, until zucchini is tender but not mushy.
Sprinkle shredded cheddar cheese evenly over the skillet and cover with a lid.
Cook for 2-3 minutes until the cheese is melted.
Remove from heat and serve warm.
