A zesty and flavorful Cilantro Lime Chicken recipe featuring juicy chicken breasts marinated in fresh lime juice, cilantro, garlic, and spices, perfect for a quick and healthy meal.
Ingredients
4 boneless, skinless chicken breasts (about 6 ounces each)
1/4 cup fresh lime juice (about 2 limes)
1/4 cup chopped fresh cilantro leaves
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lime, cut into wedges for serving
Instructions
In a medium bowl, whisk together lime juice, chopped cilantro, minced garlic, olive oil, ground cumin, chili powder, salt, and black pepper to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for 10 to 15 minutes.
Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates or pan to prevent sticking.
Remove the chicken breasts from the marinade, letting the excess drip off, and discard the remaining marinade.
Grill the chicken breasts for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Serve the chicken garnished with lime wedges and additional chopped cilantro if desired.
