Ingredients
1 pound smoked sausage links, cut into 2-inch pieces
1.5 pounds baby red potatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby red potatoes, olive oil, garlic powder, dried Italian seasoning, smoked paprika, salt, and black pepper. Toss until the potatoes are evenly coated.
Spread the seasoned potatoes in a single layer on a large sheet pan.
Place the sheet pan in the oven and roast the potatoes for 15 minutes.
Remove the sheet pan from the oven and add the sausage link pieces, distributing them evenly among the potatoes.
Return the sheet pan to the oven and roast for an additional 20 minutes, or until the potatoes are golden and tender and the sausage is cooked through and browned.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
