A quick and easy sheet pan dinner featuring savory kielbasa sausage, tender roasted broccoli, and sweet bell peppers, all seasoned with garlic and smoked paprika for a flavorful one-pan meal.
Ingredients
1 pound kielbasa sausage, sliced into 1/2-inch thick rounds
4 cups broccoli florets
1 large red bell pepper, seeded and cut into 1-inch pieces
1 large yellow bell pepper, seeded and cut into 1-inch pieces
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the broccoli florets, red bell pepper pieces, and yellow bell pepper pieces.
Add the olive oil, minced garlic, smoked paprika, salt, and black pepper to the bowl with the vegetables. Toss well to coat all pieces evenly.
Add the sliced kielbasa to the bowl and toss gently to combine with the vegetables and seasoning.
Spread the kielbasa and vegetable mixture evenly on a large rimmed baking sheet in a single layer.
Place the baking sheet in the preheated oven and roast for 20 to 25 minutes, stirring halfway through, until the broccoli is tender and slightly browned and the kielbasa is heated through and caramelized on the edges.
Remove from the oven and serve immediately.
