Ingredients

1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn kernels, drained
1 (10-ounce) can diced tomatoes with green chilies, undrained
1 cup salsa
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded Mexican blend cheese
1 cup crushed tortilla chips
2 tablespoons chopped fresh cilantro (for garnish)


Instructions

Preheat the oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon, about 5-7 minutes.
Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
Stir in the black beans, corn, diced tomatoes with green chilies, and salsa.
Add chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir well to combine and cook for 5 minutes to let the flavors meld.
Transfer the beef mixture to a 9×13-inch casserole dish and spread evenly.
Sprinkle 1 cup of shredded Mexican blend cheese over the beef mixture.
Sprinkle the crushed tortilla chips evenly on top of the cheese layer.
Top with the remaining 1 cup of shredded Mexican blend cheese.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Remove from the oven and let the casserole rest for 5 minutes.
Garnish with chopped fresh cilantro before serving.
