A hearty and comforting slow cooker beef barley soup packed with tender beef, wholesome barley, and vegetables. Perfect for a cozy meal any day of the week.
Ingredients
1 pound beef stew meat, cut into 1-inch cubes
1 cup pearl barley, rinsed
3 medium carrots, peeled and diced
2 celery stalks, diced
1 medium yellow onion, diced
3 cloves garlic, minced
6 cups beef broth
1 (14.5 ounce) can diced tomatoes, undrained
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
Salt, to taste
Black pepper, to taste
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add the beef stew meat and brown on all sides, about 5-7 minutes. Transfer the browned beef to the slow cooker.
Add diced carrots, celery, onion, and minced garlic to the slow cooker.
Pour in the beef broth and the undrained diced tomatoes.
Add the rinsed pearl barley, dried thyme, dried oregano, and bay leaf to the slow cooker.
Stir all ingredients to combine.
Cover and cook on low for 7 hours, or until the beef is tender and barley is cooked through.
Remove the bay leaf and season the soup with salt and black pepper to taste.
Ladle the soup into bowls and garnish with chopped fresh parsley before serving.
