A hearty and flavorful one-pan meal featuring savory apple chicken sausage, tender harvest vegetables, and a touch of autumn spices. Perfect for a quick and wholesome dinner.
Ingredients
1 pound apple chicken sausage, sliced into 1/2-inch pieces
2 tablespoons olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
2 medium carrots, peeled and sliced into 1/4-inch rounds
2 cups butternut squash, peeled and diced into 1/2-inch cubes
1 medium red bell pepper, diced
1 medium apple, cored and diced into 1/2-inch pieces
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Salt, to taste
Black pepper, to taste
2 cups fresh baby spinach
1/4 cup low-sodium chicken broth
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the sliced apple chicken sausage to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside.
Add the remaining 1 tablespoon of olive oil to the same skillet.
Add the diced onion and cook for 3 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the sliced carrots, diced butternut squash, and diced red bell pepper to the skillet. Cook for 8-10 minutes, stirring occasionally, until the vegetables begin to soften.
Add the diced apple, dried thyme, ground cinnamon, ground nutmeg, salt, and black pepper. Stir to combine.
Pour in the chicken broth, cover the skillet, and cook for 5 minutes until the vegetables and apple are tender.
Remove the lid, add the cooked sausage back to the skillet, and stir in the fresh baby spinach.
Cook for an additional 2 minutes, stirring until the spinach is wilted and everything is heated through.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve warm.
