Description

8 chicken drumsticks, skin on
4 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh lime juice
1/4 cup vegetable oil
2 tablespoons white vinegar
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh parsley
1 medium yellow onion, finely chopped


Instructions

In a large bowl, combine minced garlic, ground cumin, paprika, dried oregano, salt, and black pepper.
Add fresh lime juice, vegetable oil, white vinegar, chopped cilantro, chopped parsley, and finely chopped yellow onion to the bowl. Mix well to create the marinade.
Add the chicken drumsticks to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for best flavor.
Preheat the oven to 400°F (200°C).
Place the marinated chicken drumsticks on a baking sheet lined with foil or parchment paper, spacing them evenly.
Bake the chicken drumsticks in the preheated oven for 30-35 minutes, turning once halfway through, until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
Remove from the oven and let the drumsticks rest for 5 minutes before serving.
