Ingredients
2 tablespoons almond flour
1 tablespoon coconut flour
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 large egg
2 tablespoons mashed ripe banana (about 1/4 of a medium banana)
1 tablespoon powdered erythritol
1/2 teaspoon vanilla extract
1 tablespoon chopped walnuts
1 tablespoon unsweetened almond milk
Instructions
In a microwave-safe mug, combine 2 tablespoons almond flour, 1 tablespoon coconut flour, 1/2 teaspoon baking powder, and 1/4 teaspoon ground cinnamon. Stir to mix evenly.
Add 1 large egg, 2 tablespoons mashed ripe banana, 1 tablespoon powdered erythritol, 1/2 teaspoon vanilla extract, and 1 tablespoon unsweetened almond milk to the dry ingredients in the mug.
Mix all ingredients thoroughly until a smooth batter forms.
Fold in 1 tablespoon chopped walnuts gently into the batter.
Microwave the mug on high for 90 to 120 seconds, or until the cake has risen and is set in the middle. Cooking times may vary depending on microwave wattage.
