Ingredients
2 medium gold potatoes (about 6–7 ounces each), scrubbed clean
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
Pat the gold potatoes dry with a paper towel.
Using a fork, poke each potato 6-8 times all over to allow steam to escape during cooking.
Rub each potato evenly with olive oil.
Sprinkle kosher salt and black pepper evenly over the potatoes, rubbing it into the skin.
Place the potatoes in the air fryer basket, making sure they are not touching.
Cook for 35-40 minutes, flipping the potatoes halfway through cooking to ensure even crisping.
Check for doneness by inserting a fork or skewer into the center of the potato; it should slide in easily.
Remove the potatoes from the air fryer and let them rest for 5 minutes before serving.
Cut open the potatoes, fluff the insides with a fork, and add your favorite toppings if desired.
