A comforting soup with tender chicken breast, soft egg noodles, and vibrant vegetables simmered in a clear chicken broth infused with fresh herbs.
Ingredients
2 chicken breasts, boneless and skinless
6 cups chicken broth
2 cups egg noodles
2 carrots, peeled and sliced
2 celery stalks, sliced
1 onion, diced
2 garlic cloves, minced
2 tablespoons fresh parsley, chopped
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large pot, combine chicken broth, chicken breasts, carrots, celery, onion, garlic, thyme, salt, and black pepper.
Bring to a simmer over medium heat and cook for 20 minutes, or until the chicken is cooked through and vegetables are tender.
Remove chicken breasts from the pot and shred into bite-sized pieces.
Return shredded chicken to the pot and add egg noodles.
Simmer for an additional 7-8 minutes, until noodles are soft.
Stir in fresh parsley just before serving.
Serve hot in a deep white ceramic bowl with visible chunks of vegetables and chicken, noodles submerged in the clear broth.
