Carrots (peeled, cut into 2-inch pieces)
Baby potatoes (halved)
Yellow onions (quartered)
Fresh rosemary sprigs

Garlic cloves (minced)
Unsalted butter (softened)
Olive oil

Instructions

Preheat the oven to 425°F (220°C).
In a small bowl, combine softened unsalted butter, minced garlic, salt, and black pepper to create the herb and garlic butter rub.
