Description

A hearty and comforting slow cooker soup that captures all the flavors of stuffed cabbage rolls without the hassle of rolling. This unstuffed cabbage soup is packed with ground beef, tender cabbage, tomatoes, and aromatic vegetables simmered to perfection.

1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 medium head green cabbage, cored and chopped (about 6 cups)
2 large carrots, peeled and sliced
3 stalks celery, sliced
1 (28-ounce) can diced tomatoes, undrained
1 (15-ounce) can tomato sauce
4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1 teaspoon salt
2 tablespoons olive oil


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
Add diced onion and minced garlic to the skillet with the beef and cook for 3-4 minutes until the onion is softened.
Transfer the beef mixture to the slow cooker.
Add chopped cabbage, sliced carrots, sliced celery, diced tomatoes with their juice, tomato sauce, and beef broth to the slow cooker.
Stir in Worcestershire sauce, dried thyme, smoked paprika, black pepper, and salt until well combined.
Cover and cook on low for 6 hours, or until the vegetables are tender and flavors are well blended.
Stir the soup before serving and adjust seasoning with additional salt and pepper if desired.
