2 pounds Trader Joe’s beef tips, trimmed
1 tablespoon olive oil
1 large onion, thinly sliced
3 cloves garlic, minced
1 cup beef broth
1/2 cup Trader Joe’s red wine
1 tablespoon fresh rosemary, chopped
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons cold water


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the beef tips and brown them on all sides, about 3-4 minutes per side.
Transfer the browned beef tips to the slow cooker.
In the same skillet, add sliced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for another 1 minute until fragrant.
Pour in beef broth and red wine, scraping any browned bits from the skillet.
Stir in chopped rosemary, dried thyme, salt, and black pepper.
Pour the mixture over the beef tips in the slow cooker.
Cover and cook on low for 6 hours, or until the beef is tender.
About 15 minutes before serving, mix cornstarch and cold water in a small bowl until smooth.
Stir the cornstarch slurry into the slow cooker to thicken the sauce.
Cover and cook on high for 15 minutes until the sauce thickens.
Serve the beef tips hot with the rosemary sauce spooned over.
