A hearty and comforting slow cooker dinner featuring ground beef, potatoes, carrots, and onions simmered in a savory tomato-based sauce. Perfect for an easy weeknight meal with minimal prep.
Ingredients
1 pound ground beef
4 medium red potatoes, peeled and diced into 1-inch pieces
3 large carrots, peeled and sliced into 1/2-inch rounds
1 medium yellow onion, diced
3 cloves garlic, minced
1 (15-ounce) can tomato sauce
1 (14.5-ounce) can diced tomatoes, undrained
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Drain excess fat from the cooked ground beef and transfer the beef to the slow cooker.
Add diced potatoes, sliced carrots, and diced onion to the slow cooker.
Add minced garlic, tomato sauce, diced tomatoes with their juice, beef broth, Worcestershire sauce, dried Italian seasoning, salt, and black pepper to the slow cooker.
Stir all ingredients gently to combine evenly.
Cover the slow cooker and cook on low for 6 hours, or until the vegetables are tender.
Before serving, stir the mixture and taste for seasoning, adjusting salt and pepper if needed.
Serve hot, spooned into bowls.
