Slow Cooker Detox Soup

Description

A nourishing and flavorful slow cooker detox soup packed with fresh vegetables and herbs, perfect for cleansing and boosting your health.


Ingredients

2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and diced
2 celery stalks, diced
1 medium zucchini, diced
1 cup green beans, trimmed and cut into 1-inch pieces
1 medium red bell pepper, diced
1 medium tomato, diced
6 cups low-sodium vegetable broth
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt
1/4 teaspoon crushed red pepper flakes
1 cup kale, stems removed and chopped
1/4 cup fresh parsley, chopped
2 tablespoons fresh lemon juice


Instructions

Heat olive oil in a skillet over medium heat.
Add diced onion and cook for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until fragrant.
Transfer the sautéed onion and garlic to the slow cooker.
Add diced carrots, celery, zucchini, green beans, red bell pepper, and tomato to the slow cooker.
Pour in the vegetable broth.
Stir in ground turmeric, ground cumin, black pepper, sea salt, and crushed red pepper flakes.
Cover and cook on low for 6 hours.
About 30 minutes before serving, stir in chopped kale and fresh parsley.
Cover and continue cooking for 30 minutes until kale is tender.
Just before serving, stir in fresh lemon juice.
Ladle soup into bowls and serve warm.
