Tender and flavorful slow cooker chicken simmered gently in a savory broth, perfect for a comforting meal or as a base for soups and stews.
Ingredients
4 bone-in, skin-on chicken thighs
4 cups low-sodium chicken broth
1 medium onion, peeled and quartered
3 cloves garlic, peeled and smashed
2 medium carrots, peeled and cut into 1-inch pieces
2 celery stalks, cut into 1-inch pieces
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the chicken thighs in the bottom of the slow cooker.
Add the quartered onion, smashed garlic cloves, carrot pieces, and celery pieces on top of the chicken.
Pour the chicken broth over the chicken and vegetables.
Sprinkle the dried thyme, dried parsley, salt, and black pepper evenly over the contents in the slow cooker.
Cover the slow cooker with its lid and cook on low heat for 6 hours.
After 6 hours, check the chicken for doneness; it should be tender and cooked through with an internal temperature of 165°F (74°C).
Carefully remove the chicken and vegetables from the slow cooker using a slotted spoon.
Serve the chicken hot with some broth ladled over it, or use the broth and vegetables as a base for soups.
