A simple and hearty sheet pan meal featuring savory sausage, crispy roasted potatoes, and tender carrots. Perfect for an easy weeknight dinner with minimal cleanup.
Ingredients
1 pound smoked sausage, sliced into 1/2-inch rounds
1 pound baby potatoes, halved
1 pound carrots, peeled and cut into 2-inch pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby potatoes and carrot pieces.
Add 1 tablespoon of olive oil, garlic powder, dried thyme, smoked paprika, salt, and black pepper to the bowl. Toss until the vegetables are evenly coated.
Spread the seasoned potatoes and carrots in a single layer on a large sheet pan.
Drizzle the remaining 1 tablespoon of olive oil over the sliced sausage and toss to coat lightly.
Arrange the sausage slices evenly on the sheet pan with the vegetables.
Place the sheet pan in the preheated oven and roast for 30 to 35 minutes, stirring halfway through, until the potatoes are golden and tender and the sausage is browned.
Remove from the oven and let cool for 5 minutes before serving.
