Description
A tender stir-fry of diced chicken breast and raw cashews, tossed in a savory soy-based sauce with garlic, ginger, and a touch of sweetness. Finished with green onions for a fresh pop of color.
Ingredients
1 lb chicken breast, diced into 1-inch cubes
3/4 cup raw cashews
3 tbsp soy sauce
2 tbsp oyster sauce
3 garlic cloves, minced
1 tbsp fresh ginger, minced
3 green onions, sliced
2 tbsp vegetable oil
1 tsp cornstarch
1 tsp sugar
1/4 cup water
Instructions
In a small bowl, mix soy sauce, oyster sauce, cornstarch, sugar, and water until smooth. Set aside.
Heat vegetable oil in a wok over high heat.
Add minced garlic and ginger; stir-fry for about 30 seconds until fragrant.
Add diced chicken breast and stir-fry until no longer pink and starting to brown, about 5-6 minutes.
Add raw cashews and continue to stir-fry for 1-2 minutes until cashews are lightly toasted.
Pour the sauce mixture into the wok; stir constantly until sauce thickens and coats chicken and cashews, about 2 minutes.
Remove from heat and transfer to a shallow white bowl.
Sprinkle sliced green onions and extra cashews on top before serving.
