Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
2 medium zucchinis, sliced
1 cup fresh corn kernels (or frozen)
Salt and pepper to taste
1 teaspoon dried thyme (optional)
Fresh parsley for garnish
Instructions
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
In the same skillet, melt butter and add minced garlic. Cook until fragrant, about 1 minute.
Add zucchini slices and corn to the skillet. Season with salt, pepper, and thyme. Cook until veggies are tender, about 5-6 minutes.
Return chicken to the skillet and spoon garlic butter sauce over the top. Heat through for 2 minutes.
Garnish with fresh parsley and serve warm.
