A hearty and flavorful one-pot meal featuring savory sausage, tender potatoes, and crisp green beans, all cooked together for an easy and satisfying dinner.
Ingredients
1 pound smoked sausage, sliced into 1/2-inch rounds
1 pound baby potatoes, halved
12 ounces fresh green beans, trimmed
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
Instructions
Heat 1 tablespoon of olive oil in a large pot or deep skillet over medium heat.
Add the sliced smoked sausage to the pot and cook for 5 minutes, stirring occasionally, until browned. Remove the sausage from the pot and set aside.
Add the remaining 1 tablespoon of olive oil to the pot. Add the diced onion and cook for 3 minutes until softened.
Add the minced garlic, smoked paprika, dried thyme, salt, and black pepper to the pot. Stir and cook for 1 minute until fragrant.
Add the halved baby potatoes to the pot and stir to coat with the spices and oil.
Pour in the chicken broth, cover the pot with a lid, and cook for 15 minutes over medium heat, stirring occasionally, until the potatoes start to become tender.
Add the trimmed green beans and the browned sausage back into the pot. Stir to combine.
Cover the pot again and cook for an additional 10 minutes, or until the green beans are tender and the potatoes are fully cooked.
Remove the lid and cook for 2-3 more minutes to allow any excess liquid to evaporate.
Serve hot, spooning the sausage, potatoes, and green beans onto plates.
