A quick and easy one-pot pasta and chicken recipe that combines tender chicken, pasta, and flavorful ingredients for a delicious, comforting meal with minimal cleanup.
Ingredients
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces uncooked penne pasta
4 cups low-sodium chicken broth
1 (14.5-ounce) can diced tomatoes, undrained
1/2 cup grated Parmesan cheese
2 cups fresh baby spinach, roughly chopped
Instructions
Heat olive oil in a large pot or deep skillet over medium-high heat.
Add the chicken pieces and cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pot and set aside.
In the same pot, add the chopped onion and cook for 3-4 minutes until softened.
Add the minced garlic, dried Italian seasoning, salt, and black pepper. Cook for 1 minute, stirring frequently to release the aromas.
Add the uncooked penne pasta, chicken broth, and diced tomatoes with their juice to the pot. Stir to combine.
Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Return the cooked chicken to the pot and stir in the grated Parmesan cheese and chopped spinach.
Cook for an additional 2-3 minutes until the spinach wilts and the chicken is heated through.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve hot, garnished with extra Parmesan if desired.
