Description
A healthy and flavorful low calorie chicken meal featuring grilled chicken breasts marinated in lemon juice, garlic, and fresh herbs. Perfect for a light lunch or dinner.
Ingredients
4 boneless skinless chicken breasts (about 6 ounces each)
2 tablespoons fresh lemon juice
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley, chopped (for garnish, about 1 tablespoon)
Instructions
In a small bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
Preheat the grill to medium-high heat (about 400°F or 200°C).
Remove the chicken breasts from the marinade and discard the marinade.
Grill the chicken breasts for 6 to 7 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Garnish with chopped fresh parsley and serve immediately.
